It's been a while and I don't have a SP site I can look at right now. But I you can do this. You need the right combo of permissions on the list, and list settings. I would have thought your settings would work. Maybe its the other way around. You might need to create some custom permission levels where you only have perms to add, then edit item should be allowed. I'll try to look at work tomorrow if I remember.
